Central Maine Meats (CMM) is a USDA inspected meat slaughtering and processing facility of raw, smoked and ready to eat (RTE) meats. CMM has in place a Hazard Analysis Critical Control Point (HACCP) Program and a Standard Sanitation Operating Procedures (SSOP). We have also received our Certification for Animal Welfare, and practice humane handling for all animals processed in our facility. Our systems are also verified and validated by ASA and Merieux NutriSciences (Silliker), a third party auditor.
All state and local municipal requirements for good business practices and water requirements are applicable and incorporated into our Good Manufacturing Practices. (GMP)
CMM has an aggressive test and hold program for pathogen reduction, and follows strict supplier approval adherence, validated Critical Control Points (CCP’s) to prevent the outgrowth of pathogens of concern (E.coli 0157: H7, Non-0157 STEC, Salmonella, spp, Listeria Monocytogenes, Listeria, spp), and the implementation of validated interventions that are designed to eliminate or reduce pathogens of concern below detectable levels that have all been implemented and verified. As a processor of meat products, we participate in SRM and BSE removal programs.
Our facility utilizes thorough procedures for ongoing monitoring as a Critical Control Point: periodic calibration of facility temperature and product monitoring as a Control Point to ensure compliance with FDA 21 CFR and control of pathogen growth.
We control pests internally and have a working recall program in place that is audited and tested bi-annually by our in-house Food Safety team to insure the integrity of our programs.
In addition, our company complies with all current GMP’s, continuing employee training food safety programs, prerequisite and SOP’s, allergen/restricted ingredient controls, chemical separation controls, food defense procedures, and overall quality programs to ensure compliance and continual improvement.
CMM believes our food safety program is proactive so as to help set the standard for the industry, but at the same time, we want to reiterate the importance of following food handling safety instructions of any meat products by you and your customers.
