Schools, restaurants, grocery stores, and individual and institutional consumers in Maine were looking for naturally-produced and hormone-free meat products. CMM heard this request, and applied good business principals aligned with specialized customers’ needs. With technical assistance from the food cryogenic division of Matheson, CMM commissioned its first cryogenic freezing facility in Gardiner in January of 2016. Everything from slaughtering to product freezing is carefully controlled and supervised to guarantee food safety, the humane handling of animals, and the best-tasting meat product available. Using sustainable criteria coupled with humane handling principles, CMM began to provide local grass-fed beef products exclusively from Maine farmers, and now includes those from other New England states.
The meat products are frozen in a Matheson liquid nitrogen tunnel. The tunnel uses liquid nitrogen, which is a cryogenic fluid at -320º Fahrenheit produced from the air that we breathe.
